Welcome to Cusco Culinary – High Vibrational Cooking
We are a culinary studio located in the heart of Cusco, offering “High Vibrational” cooking experiences to travelers from around the world. Our goal is to showcase the richness, variety, and tradition of Andean cuisine. We focus on providing a culinary experience centered on organic, nutritious, and healthy ingredients—with guests preparing delicious dishes themselves, under the expert guidance of our professional chefs. At Cusco Culinary, we strive to offer a truly sustainable experience. To this end, we use local, organic ingredients—including a wide array of superfoods—to craft our dishes. Whenever possible, we prepare everything from scratch in our culinary studio. We avoid industrial products, and our menu features only a minimal amount of animal-based ingredients, sourced exclusively from local, free-range animals. Our mission is to provide a healthy, organic, and nutritious approach to cooking. We are what we eat; every ingredient carries an energetic signature—determined not only by its nutritional content, but also by how it was grown or raised, how it was transported, how it was packaged, and more. We select our ingredients with careful attention to each of these aspects, allowing us to offer a product that goes beyond a simple cooking class—transforming it into a conscious, high-vibration gastronomic experience.
Our culinary studio is located in the heart of Cusco, very close to the Qoricancha temple.
We are housed within “Casa Wasicleta,” a colonial-era (viceregal-style) building featuring a beautiful courtyard with stone arches and rooms decorated with Andean-Baroque furniture. We offer spacious, comfortable areas dedicated to food preparation—including stations for hot and cold dishes, a *mise en place* area, and a dining space. Our facility is fully designed and equipped to host “high-vibration” cooking classes, and travelers are welcome to enjoy all of our amenities.
Each day—from 9:00 am to 1:00 pm (lunch classes) and from 3:00 pm to 7:00 pm (dinner classes)—our experience begins at the iconic San Pedro Market. There, our chef will guide you through the various sections, explaining the wide array of products available. The focus is not merely on history, but on the diversity and nutritional properties of each ingredient—including the “superfoods” we will incorporate into our high-vibration dishes. After the market tour, we will walk a few blocks to our studio. Once there, we will start by preparing Peru’s signature drink, the famous Pisco Sour—using a unique, high-vibration recipe exclusive to Cusco Culinary. Next, we will move on to preparing three Andean dishes, where you—the traveler—will take center stage as the chef of your own creation. To finish on a high note, we will prepare a delicious dessert featuring exotic Peruvian fruits.

An overview of your experience at Cusco Culinary: A visit to the San Pedro Market.
What is included?
Our class begins with the preparation of an iconic Peruvian cocktail—our own unique version, featuring a potent, energizing house-made syrup, passion fruit, and a few other magical touches: the High-Vibrational Pisco Sour.
First course: Mashua Cream Soup
A delicious Peruvian tuber, similar to a potato and considered a superfood rich in antioxidants, served alongside gluten-free purple corn and turmeric chips. To make this a complete, nutrient-dense dish, we can also add lean, high-protein alpaca meat sourced from a local farm.
Second Course: Ceviche Trilogy
Experience three distinct types of ceviche: the classic version, featuring red onion and cilantro; the ancestral version, prepared with *tumbo* (an Andean variety of passion fruit); and the “high-vibration” version, which includes *kushuro* (an alga that grows in high-Andean lagoons), *tarwi* (a protein-rich lupin bean), and *camu camu*—a fruit from our Amazon region with an exceptionally high vitamin C content.
Third Course: “High-Vibration” Stuffed *Rocoto*
*Rocoto* peppers stuffed with a blend of local mushrooms and tender vegetables, served with a garden salad and a native potato casserole. We have transformed this classic Peruvian dish into a “high-vibration” meal, incorporating organic, diverse produce. For the potato casserole, we use three varieties selected from the thousands of native potatoes found locally.
Exotic Fruit Dessert
*Lúcuma* gnocchi served with *chirimoya* (custard apple) ice cream and a medley of Peruvian fruits. We leverage the creamy texture of the *lúcuma* to create gnocchi using *kiwicha* (amaranth) flour, paired with a spicy chocolate ganache. The dish is accompanied by a variety of fresh Peruvian fruits, notably *aguaymanto* (goldenberry)—rich in antioxidants and vitamin A—and *chirimoya*, which provides a good source of calcium.
What’s included?
The Cusco Culinary class includes: All ingredients, a Pisco Sour, a 3-course meal, dessert, *chicha morada* (purple corn drink), bottled water, recipes, and all local taxes.
